AZUR establishes an hiatus in the history of sparkling wines of chilean’s Traditional Method, since is the first sparkling wine crafted by a winery dedicated exclusively to this type of production
The founding partners Rafael Guilisastii, Stefano Rossi and Fabio Mascialino designed this project inspired by the french tradition of the Champagne houses, and searched for the cooperation of Franco Ziliani, owner of Berlucchi, famous brand of italian sparkling wines, for the technical design of the project. On a second stage they delegated the execution to a threesome of youngsters that had provided their enthusiasm and capacity of entrepreneurship to develop it. They are Sofia Guilisasti, in charge of marketing and image, Francisco Molina in charge of trading, and the italian oenologist Carlo Franchini, in charge of technological. It is with this how the First House specialized in Traditional Method of chile dedicated exclusively to the crafting of sparkling wine of high quality is born.

TRADITIONAL METHOD

Azur is crafted following
rigorously the Traditional Method,
also known as the Champenoise
Method, from the french region
of Champagne.

History of the Method:
Is common to hear among the enthusiasts the legend that suggests that Dom Perignon (1638-1715) was who discovered or created this set of procedures, but nowadays we know that he improved the techniques already pursued in the past to get to the method we use nowadays.
Certainly Dom Perignon contributed significantly in the process, especially after writing the standard for harvest and winemaking, still prevailing.
Besides, many innovations were assigned to him, like the use for the first time of the corks and reinforced bottles capable of holding the pressure of the second fermentation.

Another iconic character of the method is Barbe-Nicole Ponsardin (1777-1866), better known as Veuve Clicquot.
She is the one who develops the remuage technique (move sediment towards the cork) and labelling of bottles.
This way she exports the firsts bottles to Russian Tsars, to gradually achieve consolidation of the category globally.
Nowadays Champagne and Franciacorta are origin denominations where wines can only be produced following strictly the Traditional Method.
That way as well in the Limari Valley, AZUR was born as the first specialized house in Chile that follows the same methodology and standards of crafting that had ruled over the old world for centuries.
The method consists in a set of delicate procedures managed by the oenologist specialist Carlo Franchini.

DATA SHEET
fierce bright yellow, Azur reveals a chain of persistent and delicate fizz. In our nose it presents us soft and evocative floral notes, along with toasted bread and dried fruit.
Its personality, strongly Brut, AZUR joins a suitable acidity on the palate that harmonises gently with a structure of sharp mineral notes that distinguish it and characterise it.
Possess a good palate presence as well as a unique and elegant aftertaste.

LAPIS LAZULI

During the Renaissance,
the blue obtained of the stone
lapis lazuli, called Azur, was more precious than gold.

Its intensively blue shade, alive and of big refraction that was so pursued by the great masters of painting, was only achieved after spraying this scarce stone.
In the world only two deposits of lapis lazuli are known, one of them hides in the mountain valley. It was declared “Chile’s National Stone” due to its importance on an international level.
The Azur has been for centuries a cherished treasure that is only achieved after big and careful tasks.
Likewise nowadays in Limari, every bottle of Azur is an asset which uniqueness and nobility is hoarded and enjoyed.

AZURAZO
Also known as ‘sabrage’, is the
act of opening a sparkling wine of traditional
method with a saber or a short knife.

This ancient Napoleonic tradition consists in opening a sparkling wine with a saber or a short knife sliding it along the body seam of the bottle to the lip to break the top of the neck away, leaving the neck of the bottle open and ready to pour.
This can only be achieved with a traditional method sparkling wine of quality since the glass of the bottle and the inner pressure of it allows it, while the common ones can’t.
Every Azure bottle is designed specially to resist pressures above 6 atm, equivalent to 88 psi, and thanks to that, when hitting the weak spot of the bottle,the neck is expelled perfectly without splintering.

HOMELAND

The semidesert weather of the Limari Valley delivers ideal conditions to produce an unique sparkling wine.

The closeness of the valley to the sea [30km from the pacific ocean] allows the influence of the Humboldt current to grant freshness in summer and a good thermal excursion between the day and night. The morning camanchaca (haze) and the breezes in the afternoons, keep the temperatures under 30°C. In addition the soils with significant limestone formations bring a unique minerality to the valley.

As a consequence of this weather, every bunch is treated with utmost care and caution. These extreme conditions bring the best qualities of the varieties of Pinot Noir and Chardonnay.

With 2014 completed the company decided to take a key decision and transform the till of the vines from a traditional one to an organic one. This transition stage concludes in 2017, leading out to the first certified harvest in 2018. This change was motivated by the strong belief that organic farming is the best way of expressing the Limarí valley and powering its qualities of weather and soil.

Azur Eclipse Edition

This exclusive edition of Azur was slaughtered during the solar eclipse that occurred in 2019 in Region IV. For this occasion, the outstanding artist Maria Ignacia Edwards was asked to design a box inspired by this unique phenomenon.
